French Fries by Zac Williams. I wasn’t looking for French fries in the library. That’s just plain silly. But this book was on display, right where I couldn’t help but see it: between the check out desk and the front door. So what if the French fries on that cover where the good-for-you kind deep fried from sweet potatoes. There’s a brief mouth watering description of such things as the best type of potatoes to use for French fries; the preferred oils (one upon beef tallow was sworn to produce the most desirable taste). There’s no mention of what dressings to use: ketchup, malt vinegar or poutine. And then we have a sampling of recopies, some simple, some imaginative, and some just plain wonky. Simple: home-style fries; the drive-in-fry; and the oven fry. Category two: imaginative (and promising enough to be worth a try): Philly cheese-fries (shades of poutine ?); buffalo fries (dipped in batter); and Texas Cheddar fries. And then there’s wonky: Pesto fries; Newfie fries (featuring green peas, sage stuffing, and turkey gravy); and Masala fries (coriander, cumin, turmeric, ginger, cloves, cilantro and garbanzos round out thus recipe). And the ultimate wonky fries. Wait for it. Chocolate fries. So say goodbye to the diet; invest in a deep fryer; buy yourself a kitchen fire extinguisher and enjoy.
